Chicken LuauA modern take on a classic Hawaiian dish using spinach instead of luau (taro) leaves. What a delicious way to eat your greens!

Ingredients:

1 16oz. bag frozen cut leaf spinach, thawed and liquid squeezed out

1 1/2 - 2lbs. boneless/skinless chicken thighs cut into bite sized pieces

1 tsp kosher salt

1 13.5oz. can coconut milk (found in most Asian food sections)

oil for sauteing

Directions:

In a medium pot with lid on medium-high, heat about 2 Tbs oil, add chicken and cook about 5 minutes stirring often until chicken is opaque. Add in salt and coconut milk, reduce heat to medium-low, cover and simmer about 20 minutes, stirring occasionally. Add in spinach and mix well. Cover and cook for another 10 minutes. Serves 4

* The easiest way to remove liquid from spinach is by letting it thaw in a colander or strainer, then use your hands to squeeze the spinach to remove the liquid.
